Caldwell County BBQ

The design concept for Caldwell County BBQ was rooted in honoring Peoria’s agricultural heritage and the industrial character of the surrounding downtown fabric while reflecting the authentic, hands-on spirit of the brand. Through the use of warm brick, natural wood, and blackened steel, the architecture creates a welcoming, family-oriented atmosphere that feels both timeless and deeply connected to the history and character of the community. The 4,840-square-foot restaurant is complemented by a 2,975-square-foot covered patio and accommodates 122 indoor dining seats, 102 outdoor dining seats, and a 20-seat bar. Operational features including five onsite smokers for meat preparation and a shipping container repurposed for dry storage further reinforce the authentic craftsmanship and industrial character central to the dining experience.
